A sake I had never tried before at a tasting at Imanishi Seibei Shoten in Nara.
They chose it for the tasting list for people who are not familiar with Japanese sake because the number of foreign tourists has been increasing due to the Corona relaxation.
As you can see in the picture, the background to the completion of this sake makes it even more enjoyable, as it brings up many stories when you drink it.
Harushika is famous for its super dry taste, but this one is sweet and fruity with a slight sourness.
It is like a dessert wine for sake.
Personally, I think it is better to drink it chilled. I guess it depends on your taste.
The staff at the brewery told me that it goes well with smoked salmon.
So this time, instead of Japanese food, I tried to match it with some side dishes that would go well with the wine.
Smoked salmon is a good match, as they say. Not the best pairing, but certainly a good match and delicious.
The prosciutto salad (strawberry vinegar) is neither good nor bad. But it is also a natural sake drinker.
The marinated sardines don't go well with this dish. The fish smell is noticeable. Not that it's not good, but I don't enjoy it.
This is a dry white wine.

It was developed in commemoration of the 100th anniversary of Nara Women's University.
It is slightly thickened.
The characteristics of this sake are its fruity and sour taste.
It has a flavor similar to that of white wine, but I personally found it easier to drink than white wine!
It is a sake that does not taste like sake!
The strong acidity may not be to everyone's liking, but it is worth a try!

300ml with Narano-Yaezakura yeast
The shopkeeper told me that it had a strong peculiar taste, so I should taste it before buying! The store staff told me to taste it before buying it because it has a strong taste.
But it was only about 5mm in a small plastic cup like you would take a cold medicine in syrup😅.

The "Nara no Yae-Zakura" that I took home. When I tasted it, I thought it might be similar to Ine Mitsubai. I thought so. The sourness comes first, and then it ends with a sweet but refreshing feeling. It is a sake that can be drunk by itself. I drink it while eating tofu and vinegared food. I love that it goes well with things that taste so bland!
It was jointly developed by the industry-academia-government collaboration between Nara Women's University and the Nara Prefectural Industrial Technology Center. As the name suggests, the yeast is made from Nara's Yae-sakura cherry trees. It has an elegant sweetness, just like wine.
Wow, what's that? I was a little surprised. It's a little different. At first, it's refreshing, but later, it tastes like "I ate a delicious leaf". "Is it because I heard it was a yeast from flower petals that I thought it was leafy? My family said it was "minty", and I can see why. A lovely, mysterious sake.
