The "Nara no Yae-Zakura" that I took home. When I tasted it, I thought it might be similar to Ine Mitsubai. I thought so. The sourness comes first, and then it ends with a sweet but refreshing feeling. It is a sake that can be drunk by itself. I drink it while eating tofu and vinegared food. I love that it goes well with things that taste so bland!
It was jointly developed by the industry-academia-government collaboration between Nara Women's University and the Nara Prefectural Industrial Technology Center. As the name suggests, the yeast is made from Nara's Yae-sakura cherry trees. It has an elegant sweetness, just like wine.
Wow, what's that? I was a little surprised. It's a little different. At first, it's refreshing, but later, it tastes like "I ate a delicious leaf". "Is it because I heard it was a yeast from flower petals that I thought it was leafy? My family said it was "minty", and I can see why. A lovely, mysterious sake.
This is an unusual sake that was made with Narano Yaesakura yeast. The alcohol content is low at 14 degrees, and the taste is quite unique. If you think the aroma is subdued, you'd be wrong! The fruity apple aroma that spreads in your mouth is quite strong. There is also a lingering aroma, but it is not unpleasant. You may not like it, but I found it delicious!
