This sake won the highest gold medal at the Delicious Sake in a Wine Glass Awards. The drinking instructions state to drink it at 5°C or lower or 50°C or higher 😎. First, drink it at 5°C or lower: ☺️ It is clear with a yellowish tint. As soon as I put it in my mouth, the acidity spread throughout my mouth. It is a soft acidity. Then, a pleasant sweetness was transmitted to the tip of the tongue, followed by a bitter taste from the back of the tongue to the back of the throat. Furthermore, the center of the tongue turns into an astringent taste. The strange thing about all of these tastes is that there are no corners or unpleasant tastes. It is a taste that is pleasant, or rather, it weakens before the unpleasantness is felt, and it is a taste that subsides without becoming boring 😚. The temperature is supposed to be 50°C or higher when warmed, so I raised it to 55°C. The acidity became thicker and a little acidic. The acidity has become thicker and a little sour, and the aroma and taste have both increased. It still has no bad taste and I keep drinking it 😁. The bitter taste appears in the center of the tongue and the sweet taste appears on the tip of the tongue 😉.

Purchased at the Sendai Station Products Market We were allowed to sample a variety of Niigata sake at the event. Among the many light and refreshing Niigata-style sakes, this one caught my attention. Or maybe it was more accurate to say that it caught my tongue. I took it home with no complaints. The aroma of ginjo from the top-tasting aroma. The mouthfeel is dense, sweet and sour, overturning preconceived notions of Niigata sake! It also has plenty of umami. There is also a hint of citrus in the aftertaste. The finish is a sourness and bitterness. Thank you very much for your kindness!

The last of 🍶 purchased on a procurement trip to Echigo Yuzawa, Niigata Prefecture. Purchased at Ponshukan in Echigo Yuzawa station. Manufactured in July 2024. I had tasted the regular version of Itky at the sake tasting booth next door and was going to buy it because it had a sweet and sour taste that I liked, but the pink label caught my eye among the Itky on the shelves. When I picked it up, I found that it was labeled "Sweet Version. The regular version was quite sweet, but this one was even sweeter. I had no choice but to buy it. After a month's layover, the bottle was finally opened. When the bottle was opened, it had a heavy sweet smell. If I had to say something, I would say apricots. It is a low alcohol, but it is not refreshing. When you take a sip, the sweetness that reminds you of apricots spreads in your mouth first, but the sourness soon catches up with it. The sourness quickly fades away, and the sweetness remains in the mouth until the end. The combination of sourness and sweetness is a bit like lemonade. The aftertaste is slightly bitter with a hint of alcohol. The alcohol content is 10 degrees. Sake alcohol content is -60%. This sake can also be chilled to a crisp and drunk in large gulps.

Two pieces purchased at the newly opened KITTE Osaka. The first one is It Key. It is sweet with a hint of sourness, almost like a sweet wine. I think it is a perfect aperitif dessert drink. 🙆‍♂️
