In short, it is a sake intended to be submitted to a sake competition and does not have a barcode or other label on it. There are only about 40 bottles of this sake available in Japan. It is very difficult for sake made from Omachi to be selected for the sake competition at the time of the competition, but this sake was awarded with an honorable mention.

Participated in the "Autumn Sake Festival" organized by the Okayama Retail Sake Seller's Association.
The second brewer was Kurashiki's oldest brewery. The rice used is Omachi rice. Unlike Yamada-Nishiki, the aroma is weak, but the flavor of the rice can be felt. The first taste is unique with some acidity, but it goes down the throat nicely. This is a sake that has been judged by the Japan Sake Competition.

Since its establishment in 1716 in the middle of the Edo period (1603-1868) by Ishichi Araya, Sakabayashi has been dedicated to sake brewing. It is an easy-to-drink sake made with 100% groundwater from the mountains behind the brewery. Kumaya Sake Brewery uses a mixture of slightly soft and slightly hard water from different wells on the premises for their brewing water. The ratio is a trade secret. There is the tomb of Prince Yorinin, the fourth prince of Emperor Go-Toba, near the brewery, and Prince Yorinin was called Reisen-no-miya, which may have brought soft and hard water to this area.

I received this as a gift from my father. It is a Junmai Daiginjo and has a generous mouthfeel for an Omachi. As you can see in the picture, the sweetness and spiciness level is dry, but I think it is too sweet for me. Thank you for the good sake, father.

I bought this bottle on a business trip to Okayama.
This is my first bottle of "Ishichi" Asahi rice, one of the brands that got me into the sake swamp.
It has a nutty, savory, full-bodied flavor with a strong impression of rice sweetness rather than a fruity sweetness 🤤.
I knew it!

It was the most delicious of all the Iori.
You can taste the delicious rice flavor at first, and it has a nice sharpness at the end.

Hine and rubbery, unpleasant aroma, which is unfortunate. On the palate, a light acidity spreads on the tongue, followed by a gentle sweetness. This sake is full-bodied and very drinkable. If it did not have the hiney aroma, it might have been delicious. I wonder why it deteriorated.
