Rice used is Shonai-grown Kame-no-o
It has a characteristic sourness. It is a type that I have never tasted before, and it is a little unpleasant.
I can't find the right word to describe it, but it's like a drug.
Is this part of the aging process?
I wonder if it would be good if I heated it up.
The sweetness and bitterness come together at the same time to create a delicious taste.
It is a very well balanced sake.
You can feel the alcohol feeling well down your throat.
When it is heated, the sweetness becomes more mature and the bitterness and alcohol stand out.
You can drink it lightly, but it has a bitter, mature taste.
