Hakutsuru-Nishiki is said to be a kind of sibling sake rice to Yamada-Nishiki, having the same parents Yamadaho and Watabune as Yamada-Nishiki. It is said to have been developed with the aim of surpassing Yamada-Nishiki as a sake rice.
The taste is mild, mellow, and clear. Of course it tastes great, but since it is a Junmai Daiginjo from Sakusama, I may have expected a little too much😅.
Also, not that it matters, but I'm kind of glad I got a good picture of it in my mind: ☺️

The sweetness is assertive and very drinkable and delicious.
It goes well with rice, but can be drunk on its own.

This junmai ginjo was made using Omachi from the Akaban area of Okayama Prefecture. It has a ripe, fruity aroma with a soft and smooth taste. The pleasant acidity tightens the taste and gives it an elegant aftertaste.
