The second one I never thought I would buy. Purchased this along with Senkori Momiji UA. It is refreshing, but the umami sweetness of the rice is quite strong. I feel it is somewhat Akita-like sake. It is delicious.

The slowly developing bitterness of the improved Nobuko is well controlled by the sweetness, acidity, and umami, giving the impression of a more cohesive flavor than Haruka.

I traveled to Hokuriku, where my parents live, for a three-day weekend. But due to my busy schedule, I couldn't even buy a bottle of sake as a souvenir 😭. I thought I'd open up a bottle of good sake to get rid of the blues.
I won the Sakenomy lottery. I guess I'm lucky again this year. The bottle of this sake is just so nice. I've never seen a glass lid before.
The aroma is gentle citrus and a little lactic acid. A little bit of cemedine when it gets close to room temperature. No gassiness.
The sweetness is quite restrained. The strong but refreshing acidity is pleasant.
The second half is also mainly acidic, and finishes crisply when a slight bitterness is sensed. The lingering taste is astringent.
It is quite a dry sake. But as one would expect from Niimasa, it is very tasty. It is very refined, easy to drink, and goes down very smoothly. I realized once again that this is a very special sake.

This is the first new product in two years! The "NEXT5 Colors 2022" series was previously a joint brewery, but now the five breweries can make the most of their individual characteristics, including yeast, except for the 50% milled rice ratio of Akita-produced "Kensho Shinko. It is an interesting experiment for each sake brewer to be able to enjoy different expressions of their respective characteristics 😆.

The color is clear and colorless. The aroma is gorgeous, with impressions of white flowers and fresh fruits such as grapefruit. Polished rice top-fruit. The alcohol tang is also pleasantly strong for its strength.
The palate has a smooth, slightly thickened texture. The attack has a juicy impression with an acidity reminiscent of citrus fruits. The second half is tightened by a firm sharpness and bitterness. The lingering umami and aftertaste are not strong, and the finish is light.
Perhaps because of its sharpness, the overall impression is of a light mouthfeel, but the flavor elements are quite strong, especially in the first half, and it is interesting that the wine is also very drinkable.
It has a deep, sweet fruitiness reminiscent of the opulence of yaezakura (double cherry) rather than someiyoshino (cherry).
