It has been a long time since I have had sake from Ehime Prefecture. The design on the cup suggests that it would be best to drink it during the cherry blossom viewing season, but when I received it, it was just before summer, so I opened it thinking it would be better to leave it until next spring 😅🍶It has no peculiarities, just a normal taste, but it has a clean aftertaste and is easy to drink. I have 7 more cups of sake that I got 😊, so I'm going to drink them impatiently 🍶😊.

As vacuum sake, it is made in the brewery, vacuum-preserved 99%, and poured through a pouch with a check valve and a server connected to it.
He said the company has the patent rights to the check valve.
The sake is produced by Sakura Uzumaki Sake Brewery, a member of the Traditional Sake Brewery Group.
Sakura-Uzumaki Shizukuhime Junmai-shu.
The Sakura-Uzumaki I had previously tasted had a nutty image, but this sake was rather hard and refreshing, but had a strong umami flavor.

They seem to be using a device called "vacuum sake" to keep sake fresh, and when we were shown the inside of the device, sake in pouches was set.
They said it was filled in a vacuum at the brewery.
Sakura Uzumaki is also a member of the Traditional Sake Brewery group.
I was impressed by their visit to Hanshin Department Store last year. I was impressed by this brewery😅.
Unlike the Hida Takayama I mentioned earlier, this one is a little sweeter, a little more floral, and delicious. Maybe a little light.

It has a heavy mouthfeel with a delicious flavor, and the brewing alcohol seems to give it a sharp edge.
Seems like it would be good heated, but I wonder how it would be like to heat up a draft sake!
