It seems that Takahashi Sake Brewery of "Choryo" in Nagaoka, Niigata Prefecture is brewing original sake, and the unfamiliar brands are of high quality and fun👍.

We went with 3 people and had a 2 hour course, we had 22 bottles and each person had about 4 bottles.
We had seasonal sake and heated sake, and the selection was quite well thought out and more enjoyable than expected👍.
