This Sake is a 2021 US National Appraisal Gold winner. It has many good points for Sake. Good fragrance, sweet and enough acid to cleanse your pallet.
The flavor is ripe peach and banana. It has a nice juicy texture and a full mouth feel. I can agree, this is a gold winning Sake. 🥇

This is a warehouse in Shimane Prefecture where there is little information.
It seems to have revived after it entered into the 2035.

It's nice to be able to try sake from a brewery that you've never had the chance to try before and for which you have little information 😃.
The aroma is slightly muscat-like.
It has a strong attack in the mouth. The taste of the rice is strong.
There is also acidity. There is a strong bitterness. There is also an earthy flavor. It has a rich and thick taste.
The aftertaste is more refreshing than I expected while retaining the rice flavor.
It is neither spicy nor sweet.
The impression I got from drinking it is that it has a hard umami taste and is a little heavy.
I think it is similar to Shichibondari.
It's a good sake that's perfect for sipping.

This is a pure rice sake from Miyakushiki Brewery in Kakushi-cho, Ezu City, Shimane Prefecture.
It seems that the brewery had closed down about 5 years ago due to the aging of the master brewer and lack of manpower, but on May 18, 2019, the brewery made a complete restart.
I asked a liquor store in Shimane to let me order it. I'd like to keep a bottle of this sake in my house at all times (I find it tastes even better when I drink it with Hamada's Akaten).
