Smells of yogurt, white peach
Light, watery, rice-like, white peach, sour, pungent, refreshing to the finish. Delicious.
When the temperature rises, it tastes pungent from the beginning. It makes your throat tingle.
It is also delicious when mixed with sweet sake.
Something about drinking on weekdays has become a regular occurrence 💧.
Today, I got this one from a nearby liquor store before visiting my favorite yakitori restaurant this past weekend.
This is my first sake from a new brewery, Kaygetsu CEL24 Junmai Daiginjo from Tosa Shuzo.
I was told by Sake-no-wa that CEL24 sake is delicious, so I finally got it.
So, let's have it right away.
First, the aroma. It has a sweet and fruity aroma.
When you put it in your mouth, you can feel the sweetness that is also fruity.
The mouthfeel is clean, smooth, and easy to drink.
In the middle part of the bottle, you can feel the bitterness and a little bit of saltiness.
In the second half, the spiciness spreads quickly in the mouth while retaining the sweetness, and the balance is so good that you can't stop drinking it.
It was a truly delicious sake that completely changed my image of Kochi sake.
If I had not learned about this sake at Sake-no-Wa, I am sure I would not have encountered this sake.
It was another blissful sake time.

I was under the impression that Kaygetsu was very dry, so I didn't try it, but I thought it would be a good challenge if it was CEL24 junodai and also an autumn sake 😀 It was delicious!

I did some research and about half of autumn sake is orange, so I would like to drink at least one orange autumn sake 😀.
I saw it on the line at Aeon Liquor and thought, oh, CEL yeast? I thought, and picked it up.
I learned that CEL is a Kochi yeast that produces high levels of ethyl caproate...but I've never had it...I thought.
So I bought it.
Crystal silver in color with a hint of yellow.
There is a gorgeous aroma of ethyl caproate, and a rich aroma of fruits such as honey apple, Japanese pear, white peach, and muscat. There are nuances of greens such as chervil and well-polished rice nuances of Kamishinko and Shiratama-dango (white dumpling).
In the mouth, there is a mild sweetness, but the acidity is also nicely present and cuts through the sweetness. There may be a hint of carbonation (?). There may also be a hint of carbonation. The aftertaste is pleasantly bitter with a full-bodied bitterness, and the finish is bitter.
I have the impression (or is it just an assumption?) that ethyl caproate will go away if it is left to stand. I had the impression that ethyl caproate-based beverages would not rise in the fall, but this one seemed to rise beautifully.
Although it has a gorgeous aroma, it has a calming taste and is not bad as a food sake.
The alcohol content is not too high at 15%, and it has a good balance.
I think I will buy another bottle.
