The unfamiliar symbol "27BY" refers to the brewing year.
The date of manufacture is 2022.1, so does this mean the date it was bottled?
I assume it's an aged sake, and decide to have it warmed.
I started with it at room temperature, and it was dry.
I can feel a slight sense of aging, but I think it could also be served chilled.
Next, I had it warmed to about human skin temperature.
I rarely drink it warm, so I don't have a standard for whether it goes well or not.
However, I think it goes well with all the dishes I paired it with. I wanted to pair it with sashimi, but unfortunately we didn't have any, so I used fish cake instead. I thought it would go well with sashimi. I wonder if it would go well with sweet soy sauce.
It goes really well with mackerel simmered in miso and chopped green onions.
It's also good with pickles.
I used to buy cheap sake from the supermarket when I heated it up, but this one seems to be different from those. I can't be sure, though, because I remember drinking it a long time ago.
Also, it seems to go well with Japanese style hot pot (soup stock type).
Next time, I would like to try pairing it with nabe, even if it is not the same sake, with a sake labeled BY.
Hot sake is not so good.
It might be better with a more mature sake, but so far I haven't found it to be good hot.

Sake from Yuasa-cho, Wakayama Prefecture, which I received as a hometown tax donation.
For a donation of 12,000 yen, you can get two four-pack bottles.
The other one is a Junmai Daiginjo, also from Nihonjo. I plan to enjoy it at a later date.

I tried it with cold sake, and it was dry and mild. I paired it with sushi from the supermarket, and it went well.
