I like Iwao a lot. I've been to the Iwao brewery, or rather to the company, and I fell in love with the Showa-esque atmosphere of the place. Wai no Yao.

Purchased after being recommended by Takahashi Yo Shoten.
It is a blend of sake made by the previous toji that remained in Mr. Takai's brewery, known for its rocks.
Hot sake.
It can be drunk at room temperature, but a slight sense of maturity can be felt.
The sense of maturity is also noticeable, but when warmed up, the restrained flavor and aroma blooms and fills the mouth with a full flavor.

The aroma, sweetness, umami, and acidity of the rice are all fully utilized in this richly flavored sake. It is not fruity, but it is not difficult to drink. It goes well with anything served with rice, such as cod roe. Like cod roe.
It is said to be blended with the last sake brewed by Mikito, the toji who left the brewery. I'd be happy if we could drink this kind of sake on a regular basis.
55%, 15-16%, Sake degree +2, acidity 1.6, light on the palate, but with a strong sake flavor and dryness, this (my first time drinking it) is truly "iwao"!

Sake named after the words of a monk from the Kamakura period (1185-1333): "Ko-kyo shinshin teru ko ko kyo.
It is austere. Not in terms of taste, but in terms of appearance.
The aroma is somewhere between twisted and matured, which I personally love. When you swallow it, the alcohol feeling remains in your mouth. More than anything else, it has a strong umami taste.
It is very strong.
