Surprisingly fruity and thick aromas of banana, mango, orange. Very bold and punchy on the palate, wow. Very full and rich, lots of umami with a strong bitter element that is not unpleasant. Acidity is present but not overly powerful. Strong umami leads to a rather dry palate. Alcohol is a little on the pungent side. Overall very full of body and character, but also a little confusing as there is great complexity. I think this would do well warm. 3.75/5

Very aromatic. Bold, fruity and acidic on the nose. Quite tropical: pineapple, lychee, strawberry, peach, some banana, a hint of fresh cheese. Quite deep and surprisingly grounded on the palate. Nutty, good umami. Some butter, cream, mushrooms, plums, dried fruits. Acidity is zingy but not powerful. Leaves a tingling on the tongue. Finish is long, palate is slightly on the sweet side. Body is on the full side. Bold, full of character, luxurious, but slightly overbearing for my taste. 3.75/5

Gentle sweetness, some faint apple, lots of rice, and some bright zesty citrus on the nose. Fairly simple, but clean and well rounded. Bold acidity, some sharp sweetness. Very powerful on the palate. Spiced apples, cloves. Very unique. Finish is not very long, but the impression lingers. 3.5/5

Deep, rich sweet aromas of prunes, raisins, and pickled vegetables. Sweet, yet clean on the palate with a solid umami. Dried fruits, pickled vegetables, apple, banana, mushrooms. Honestly tastes simply old, rather than hiyaoroshi. 2.75/5

Nose: peach. Pretty much only peach, with a little bit of deep, caramel like sweetness like prunes. Palate: full bodied and luscious sweetness. Thick but not sticky, leaves a little coating on the lips. More peach, stone fruits, prunes, brown sugar, some caramel. Really quite rich and juicy. Finish is not so long, with the mouth coating sweetness lingering more than any particular flavours. Good as a dessert wine perhaps, but not my preference. 3.25/5

Very creamy, dairy, and nutty on the nose. Yoghurt, cream, fresh cheese, almonds, and maybe a faint hint of banana, grape, melon. Surprising earthiness like rice bran as well. Thick mouthfeel at first, with strong sweetness and acidity, but this fades actually quite quickly. The lees are grainy but not overbearing. Some tropical fruitiness like passion fruit in there too. Surprisingly refreshing for a nigori. 3.5/5

Not very aromatic, but at first some interesting aromas of caramel, toffee, sweet fudge, banana, and some cereal like biscuit, all layered over rice flour. The aromas do not linger for long though. Very light and clean, and it is very dry on the palate with a dry finish. Some rice flour, and certainly some shiitake mushroom like umami. Quickly makes you want another sip. Will pair with Thai food soon.

Beautiful, round, soft bouquet of aromas: some banana, lots of peach, plum, some nashi pear, pineapple, hint of orange. Thick, juicy, mellow. Bold and full on the palate. Overripe plum, red grapes, prunes, with some astringency. Some residual sugar on the lips but overall feeling is not too sweet. Very tasty and the aromas are inviting and delicious. 4/5

Not getting many aromas from this cup. Lovely and full on the palate. Rich and nutty with a dry, umami feel. Some muted fruitiness like raisins and dried fruits. Really tasty, but quite full and punchy. 4.25/5 Look up details later.

Nose: a fleeting hint of apple before getting some pear, then a big punch of pineapple. Behind the pineapple is some steamed rice, but light and fluffy like steamed basmati. Fairly simple and not too complex. Alcohol comes through a bit. Lots more pineapple on the palate. Bold acidity. Tingly on the tip of the tongue. Again, fairly straightforward in terms of complexity. Finish is rather dry and clean, with help from the acidity and alcohol. Simple but good. 3.75/5

Instantly a wash of different aromas: rice, stewed apple, a hint of pear, grapes, honey and wildflowers, a hint of pickles. They all come and go at the same time. Very light and clean on the palate. Rice and soy, pickled vegetables. Good umami gives a dry end to the palate and a short finish. 3.5/5 room temp 4.25/5 warm.

Bright and juicy on the nose. Bubblegum, cotton candy, some pineapple, apple, and a good dose of almonds or almond milk. Full, bold fruit and umami on the palate. Nutty, with overripe cantaloupe, some mandarin orange, a hint of milk chocolate. Long, clinging finish of dried fruits. Very rich and punchy, lots of character. 4/5

Banana and yoghurt jump out the glass of this sake. Light and fresh, with cream, some fresh nuts and cheese also accenting the nose. The palate is slightly more junmai-esque, with rice coming through, followed by umami of grilled shiitake mushrooms. Acidity is surprisingly mellow, and the palate quickly melts away to leave an umami-led dryness across the tongue. Short finish with a hint of astringency. When warmed the palate fills out very nicely, with a longer finish. 3.5 chilled 4.25 warm

Mature aromas of sweet vegetable pickles, light soy sauce, overripe banana. Full and sweet, some acidity. Some honeyed sweetness, more pickles on the palate. Smooth, umami creaminess. Acid is bold and and helps to offset the truck palate. I think this would be great warm. 3.75/5 room temp. Will update after trying warm. 4/5 warm. Fuller, rounder.

Bright and fresh on the nose: pineapple, peach, apple, pear, strawberry. A hint of something creamy like fresh cheese, and the light acidity associated with it. Much creamier and more dairy on the palate. Fresh cheese, yoghurt, and cream. This yields to some fruitiness, but not as much as on the nose; just some light apple and pear perhaps. The acidity makes the palate quite light and crisp, but there is a lingering sweetness and astringency. Served chilled, this may open up more warm. 3.75/5

Fairly bold steamed rice aromas out the gate. Look behind the rice and you'll find a pleasant little arrangement of banana, nectarine and grape. Very clean on the palate. Smooth, with a slight hint of dairy, but mostly a solid serving of rice notes underpinned with umami dryness. There's perhaps a suggestion of something like almond milk in there too. Aroma is very pleasant for a honjozo, but I find the palate a little lacking in character. 3.25/5 Happy sake day.

Lots of fresh banana, some green apple, and a hint of something citrusy like orange in the background of the nose. Soft with a punchy acidity of orange and peach at first, then softening into a mushroom and nutty umami profile. The umami makes it a little dry, and the finish isn't too long. A solid little junmai, but nothing mind-blowing. Probably great with a meal, and probably also good warm. 3.5/5

Rich and juicy on the nose. Banana and rice appear at first, but soon give way to a bouquet of peach, nectarine, and plum. Thick and juicy, with a strong umami foundation. Lots more nectarine, apricot, peach on the palate. The stone fruits profile lends a bold and unwavering acidity that remains throughout, keeping this refreshing and delectable. Soft and gentle, yet with enough bite and character to keep it interesting. Not my favourite flavour profile, but very good. 3.75/5

Bright, lively tropical aromas open up this sake. Lots of juicy pineapple, some mango, passion fruit, and maybe a hint of mozzarella. Full body, rich acid on the palate. Plenty of umami flavours soaking through the fruity top layer: apple, pineapple, banana, before quickly breaking down to reveal mushrooms, walnuts, and mature cheese notes. Alcohol is punchy, but not aggressive. Plenty of attitude. The body lingers in the mouth, despite the dry finish, so it's a slower sipper. 4.25/5
