It is a special junmai-shu with a dark pure taste and a clean throat. The clerk told us that the label was printed with characters written by a descendant of Date Masamune. It is shown with a sea squirt, but Hidakami goes better with sashimi.

The "Arahashiri" portion, which comes out at the beginning of the pressing process, is blended with the "Yomei" portion, which comes out at the end, and bottled in a light nigori state. It has a gentle yet fruity ginjo aroma and a crisp mouthfeel with Miyamanishiki-like umami and astringency. It is light and refreshing with just the right amount of acidity and sweetness. Above all, the polar bear print is cute.

The pressed special junmai sake is stored in a thermal tank at ice temperature without any hi-ire. By storing it in a thermal tank at ice temperature, only the roughness is mellowed while the youthfulness is preserved. It can also be enjoyed during the hot season. (As indicated on the label).
