This sake is made from Omachi rice grown in Bizen, the finest of which is Akaban Omachi. It is a smart but very, very penetrating sake, bearing the name "W" of Watanabe Shuzo. A friend of mine gave me this drink. I knew only Tokoro Sake Brewery when I heard of Ibi in Gifu Prefecture, but I didn't know they had such a delicious sake. The sake in a jar is very chic. Hourai, I bought two bottles. The first one is on the left. Hiyaoroshi unfiltered original sake. The sake has matured over the summer. It's said to have a dense, honey-like texture, but it's really a sake with a deep flavor. At the first sip, you may think it is just a normal sake, but from the second sip, the rich flavor and sweetness spreads. It is a sweet sake, but the sweetness of the rice is very elegant. It is recommended for this autumn. Next time, we will enjoy the naturally fermented Hiyaoroshi Special Junmai Ginjo.
