I've been drinking a lot of new, unpasteurized sake, so I wanted to try a heated sake with a big punch.
When I tasted it lukewarm, it had a rich, matured aroma, followed by sweetness, umami, and a lingering acidity. But the aftertaste was surprisingly clean.
The third Sensation of the season is a gold label, appropriate for the New Year. It has a good balance of juicy sweetness and sourness, and goes down easy.
The second Sensation of the season was the Black Label. I personally prefer it to the first one, White Label, because of its acidity and tightness. After enjoying the supernatant for a while, I tasted it with oriental flavor.
The supernatant has a juicy, crispy, sizzling taste, and when mixed with a generous amount of ori, it adds mellowness, astringency, and bitterness. It's twice the taste in one bottle!
As the label says, "Be careful what you spew!" The activity is amazing! It's a good thing it's bottled in a screw cap PET bottle... if it were bottled, half the bottle would be gone. It has the freshness of new sake.
