Beautifully sublime! It’s texture is built around the taste of umami, with just the right level of sweetness, acidity and bitterness, their presence are clearly felt but not excessive. It’s like a piece of snowflake melting at the tip of your tongue. The nosing is not strongly aromatic but quite like fermented rice! Well done iso-jiman, I’m so incredibly impressed!

not as elegant as juyondai, but the richness of umami and the layer is hard to give up. Personally I would put its ranking above juyondai, for the great value you get.

Loved all the bottles apart from the first one from the left. It’s body was a bit delicate, layers didn’t come out as much as the rest. Still it remains a versatile piece of art.
