Junmai dry sotto voce
Kanbai Shuzo 1.8L 1,980 yen (tax included)
Junmai Dry Taste from the brewery of Miyakanbai.
It is a sake with a fruity sourness.
It is a very reasonable price at 1,980 yen.
The acidity is even more pronounced when heated. It is very tasty both at room temperature and heated. It's not boring to drink.
This sake is really very good.
It has a fizzy, standing taste.
It is easy to drink, more like water than umami.
I think I prefer the Junmai version of this.
3rd day after opening the bottle
The fruit flavor comes in with a bang at first.
I was surprised at how different it was from the first day.
It is higher than the price range I usually buy, but I would like to repeat this.
You can feel a little bit of petiteness.
It is dark and tasty. I feel a bit of sourness and bitterness afterwards. It was about 1,200 yen including tax,
Terribly cosy. I want to shout "thank you" for making a really delicious sake.
Light and refreshing.
It tastes a little sour and has a delicious flavor.
After drinking, you will want to drink it again.
It is a sake that can be drunk in summer.
It's sweet, with a strong acidity and a slight bitterness at the end.
I buy it every year, and it is as delicious as ever.
The price is less than 1,400 yen (tax included) for a No. 4 bottle, so it is too cosy.
A gift.
I've bought Kisoji every year.
This year's first Kisoji.
Sanwari Koji is very tasty. It has a rich acidity and umami, and has a good sharpness.
Miya Kanbai
I met this at Sake Restaurant Furari.
It was delicious.
It has a good balance of acidity and umami.
What surprised me the most was that even after three weeks of opening the bottle
I want to buy it again.
I want to go back and buy more.
The brewery here has many sakes with acidity and flavor.
Andante, for someone like me who gets drunk easily, can be drunk easily, probably because of its low alcohol content.
I felt the acidity and umami in that order.
In the aftertaste, I felt some alcohol on my upper jaw, but it was still sharp. A delicious sake.
The price of 1.8L 2,578 yen is too good to pass up.
When I went to Azumino for sightseeing, I wanted to buy Matsuo Shinshu Nagano, which I drank before, so I contacted Takahashi Sukezaku Shuzo and he introduced me to Yamaya Shuzo in Matsumoto.
"I was told that there were two kinds of sake, Togakushi and Tokusoku Junmai, not Shinshu Nagano, so I bought those two kinds.
"Togakushi" has less aroma and more flavor, and the aftertaste is sharp. When I drank it on the second day, the spiciness of the alcohol disappeared and it seemed to be mellower than the day before.
Good balance of umami and sourness (a little) that you feel in your mouth. The umami remains in the mouth.
It was recommended to me by my boss, and I hadn't had Nanayo for a long time, but it was very good.
Kamoei, Torihama Sake Brewery
A local drink for the locals
The aftertaste is so light that it is hard to believe it is a honjo.
It has a good balance of sweetness and acidity.
