After a short pause, the acidity, sweetness, and umami explode like fireworks. The soft ginjo aroma with iso-type fruitiness supports the three-dimensional taste. The finish is sharp and clean. The aftertaste is full-bodied with a lingering sourness that lingers on the palate. The synergistic effect will be more delicious when paired with oily grilled fish. I want to drink it leisurely on a long autumn night. I haven't had Kido for a long time, but Hiyayogoshi is simply delicious with even more flavor!

The aftertaste leaves a tangy sensation. The return aroma is beautiful and the soft umami of the rice leaves a presence that makes the lingering taste enjoyable. The sake is delicious enough on its own. It would be great with grilled white meat fish or fruit salad.

Ona Tokubetsu Junmai Hiyakioroshi The color is clear and transparent with a slight yellow tinge. The aroma is mild, but the richness of the rice is soft and fluffy. The texture is slightly heavy. The mouthfeel is slightly smooth and rounded, as is typical of hiyaoroshi. The moment it enters the mouth, exquisite acidity, slight sweetness and umami spread softly. There is also a sweet and sour capsule-like flavor, which seems to be a synergistic effect with autumnal foods that contain a lot of umami and amplify the umami. The base has a slight sense of maturity and richness, with an elegant depth that is gradually delicious. The fresh acidity that spreads from the beginning lingers until the end, while the astringency and bitterness tighten the finish, and then it quickly cools down. The returning aroma is soft and light with a sense of freshness and maturity. The transition from summer to autumn comes to mind. A sake to be enjoyed in the evening when the light is a little brighter.

The mouthfeel is smooth, but the flavor is rich and dry. Slightly spicy and pungent on entry Sourness, sweetness, and umami, like when you eat a pear, hit you at once. The bitterness in the aftertaste tightens up the whole taste. The aftertaste of sweetness and sourness is exquisite. This is a sake that brings the whole thing together. Sake alone can be considered delicious!
