We visited a small brewery in Toride City, Ibaraki Prefecture. The name of Tanaka Shuzo's representative brand "Kimimandai" was named by Emperor Meiji.
We also purchased a summer sake, which was even better than expected. This time it was a fire-brewed junmai.
The first sip.
There was a gentle acidity. It is not a fruity acid, but a little bit like a myrin-like mass. It has a dry and dry taste with a chili chili texture on the tongue.
It is not too sweet and is suitable for eating. It does not interfere with food and can be tasted easily. A sake with a Japanese flavor reminiscent of soy sauce and dashi (Japanese soup stock). It has a blend of nostalgia and gentleness, perhaps because it is a sake brewery run by a couple.
The low price is also good.
The name of the brewery is "Kimibandai," but I like to call it "Kimiman" when I abbreviate it.
By the way, Ibaraki is famous for natto (fermented soybeans), so they are worried about not being able to eat natto during the sake brewing period.

It was a small brewery. The owner, who is a kind and gentle woman with a low profile, is very kind and welcoming.

The freshness of the unpasteurized sake is strong. As the summer sake label suggests, it is refreshing and easy to drink. The alcohol content is the standard 15%, but it has a good mouthfeel.
The acidity is subtle and lingers on the palate.
It is a bit rude to say, but it is much tastier than I imagined it would be. However, most of the unpasteurized sake from unknown breweries is also delicious, so I would like to judge it in combination with the hi-ire sake I buy from this brewery.
