Sake purchased in Nara, GW.
This is my first time to buy sake from Nakatani Sake Brewery.
It seems that they have a factory in China and also produce Chinese sake using Chinese rice.
It has a mild sweetness with a slight yogurt-like nuance. There is also a good amount of acidity.
Yamanokami yeast is a type of sasayuri. I've had Yamanokami yeast sake in the past, but I didn't know it was a flower yeast.
I heard that there used to be a raw version of this sake, but I am sure it is delicious.
It seems that this sake is also limited in stock. There was only one bottle left at the store where I bought it.
I heard that they moved the brewery that was closed at the Corona Disaster to the center of town and started a brewery where you can experience brewing.
I wonder if that's why they are discontinuing all of their existing products.
