This is a sake from Ono City, Fukui Prefecture. I just had a bottle of the fire-retarded Junmai a few days ago, but let's see.
A chocolate, vanilla, or something similar aroma came up, and a rich pungent taste came up from below.
It's not that the taste is sweet, but the aroma is sweet. The aroma is sweet, not the taste.
The aftertaste is also quite dry. This is a sake that is both interesting and cohesive.
When it is warmed, it has an acidity from lactic acid bacteria that was not perceptible at room temperature.
This sourness is interesting, but I think it would be better to keep the chocolate or vanilla-like aroma.
The days pass by twice as fast as when I was a new adult.
