こるね<It's lukewarm. The flavor and sweetness is amazing. I drank Kikutaka-san the other day in cold (room temperature). I was finally able to revisit it, so I heated it up. I'll start with a hot one (about 60°C). The aroma is pleasantly alcoholic and pungent. When the temperature drops to about 40 degrees Celsius (lukewarm heated), the alcoholic sensation becomes milder, and the umami-sweetness begins to fill the air. I knew it had to be heated! The umami, bitterness, and sourness are a little more retracted in a heated sake than in a chilled one. That's why the sweetness comes out in front. When it's lukewarm, both the umami and sweetness open up, and it's amazing. It's amazing! This is a sake that should be heated. I had a lot of fun sipping it from the very warmed to the heated (30°C). If I were to compare it to Ghibli, I'd say it's Minami-san from "Mimi wo Sumemeba. He's the guy with the mustache, red bow tie and tambourine. He has his quirks, but he teaches us that there is fun to be had only when you are old. こるね<It's a step ahead of "hinee sake. This brand will be discontinued in 2019. This sake is also 30BY and has been aged for 2 to 3 years. The aroma is definitely aged. The aroma is definitely already aged, and it's just a step away from being old. But that peculiarity is good. The mouthfeel is very smooth. There is a sweetness and umami in the center of the sourness that has been added by the aging process to the typical Yamahai taste. Then, the bitterness and the umami of the aging come from the back. This is a good combination of Yamahai, Honjozo, and aging. To be honest, it is not recommended for beginners. It is full of peculiarities. But it's a dangerous swamp to get into. I definitely want to drink this feeling warmed up. I heard it's hidden and doesn't get reduced easily, so I'd like to try it heated next time I come. If I were to use a Ghibli analogy, I'd say it's Pom Grandpa from Castle in the Sky, and it's aged just as well at 70 years old. He's kind to Pazoo, but he's definitely an old man with a lot of quirks when he gets back to town. Satisfaction: ★★★★ I'll post the full version on the blog, complete with character images and such. FOX(備忘録)A little sourness comes at the beginning, but you can feel the flavor of the rice, and the aftertaste is not so lingering. The impression is light, but it's good. Too bad you can only buy it in a bottle: 70%, Junmai, Osananishiki, about 2800 yen, Otsuka sake shop in Honmachi.

トモヒロGood evening. I found this at Morimasa Shoten in Nagoya City, Aichi Prefecture. When I searched for it on Google Maps, I saw it in a picture taken a year ago, so I rushed to buy it. When I got there, there were two bottles of Junmai Ginjo left in the refrigerator.

まるわ4 days after opening the bottle, delicious! What is it? Deep and soft taste! It's not a traditional sake, but it's good for heating. It's not a traditional sake, but it's a nice warmed sake. Juicy and full of acidity!

まるわKikutaka for the second time. I wish I had known about this brand sooner! It's the first day of opening the bottle, so the acidity still has a bit of an edge. But the flavor is good enough. I'm looking forward to seeing how the taste changes from tomorrow.
