こるね<It's lukewarm. The flavor and sweetness is amazing. I drank Kikutaka-san the other day in cold (room temperature). I was finally able to revisit it, so I heated it up. I'll start with a hot one (about 60°C). The aroma is pleasantly alcoholic and pungent. When the temperature drops to about 40 degrees Celsius (lukewarm heated), the alcoholic sensation becomes milder, and the umami-sweetness begins to fill the air. I knew it had to be heated! The umami, bitterness, and sourness are a little more retracted in a heated sake than in a chilled one. That's why the sweetness comes out in front. When it's lukewarm, both the umami and sweetness open up, and it's amazing. It's amazing! This is a sake that should be heated. I had a lot of fun sipping it from the very warmed to the heated (30°C). If I were to compare it to Ghibli, I'd say it's Minami-san from "Mimi wo Sumemeba. He's the guy with the mustache, red bow tie and tambourine. He has his quirks, but he teaches us that there is fun to be had only when you are old.
