There are only a few bottles left in the Aizu Buyout Series. Made with 60% polished rice and 100% Yumen no Kou. It is once-fired. It requires refrigeration, but for some reason it is stored at room temperature and served at room temperature. When poured into a glass, it has a very slight golden color and a modest aroma, but with a hint of sweetness. The taste is surprisingly beautiful in the mouth, with a strong sweet flavor! It has a strong impact of being sweet and umami, but it is clear sweet and umami without any harshness or alcohol. The aftertaste is also sweet-sweet without any pungency or alcohol, so it is delicious with cold soothing water! This is my favorite type of sake. It is my favorite type of sake!

I thought my name was "Wa" until now, This is named 'times' 😳. I checked and it looks like he changed his name from "Wa" to "Kai" 😆. Anyway, I had a "Wa" last year, I think. I enjoyed "Wa" direct pumped raw sake, so I'll drink the one that seems to have almost the same specs: ☺️ It has a mild melon-like aroma 🍈. Very refreshing and fresh on the palate: ☺️ The balance of sweetness, umami, and acidity is really good, and the bitterness at the end gives it a nice crispness. It's a good balanced sake that you don't get tired of drinking like Hirotogawa 🍶This is delicious 🤣. I wonder if it's due to the sweetness? It's juicy and delicious too 😋. I got some cheap snow crab, so I made a crab casserole and it went great with it 😍👍👍 I knew it would be delicious 😁.

Junmai Sake is the fragrance of dreams (Kaori) Introduced in Reborn Kura in dancyu 2022. Mr. Kobayashi, the brewery owner, is from Chiba. His mother's family owns a brewery in Aizu Misato-cho. He used to work for an IT company, but when he heard about the demolition of a sake brewery, he became a brewery owner. The brewery reopened in 2020. Mr. Kazunori Inomata, who was also involved in the production of Tobiroki, is the master brewer. The name was changed from "Wa" to "Kai" this year! Fresh and fruity, but with a strong umami, bitterness, and overall well-balanced sake quality. I first encountered it at a sushi restaurant in 2021, where it was introduced as a recently reopened restaurant, and at that time I just loved it and became a fan!
