A gift from my brother at home the other day. It was chilly, so I paired it with pork shabu-shabu. It was a little high at 17%, so I tasted it slowly at first and then served it on the rocks in the latter half of the bottle. I enjoyed the mildness of the wine.

The Tanaka Sake Brewery has a 380-year history and is located along the sea and mountains, close to Kenshin Uesugi's Kasuga Mountain and the Naoetsu Bathing Beach. The name of the brewery is said to have originated from the initials of the store name "Notoya" (when sake was transported to Ishikawa Prefecture by ship) and the owner's motto from 1943, "A hawk with a hawk hides its talons. While many bottles have a cool silhouette of a hawk on them, this bottle is an old-fashioned design honjozo. The aroma is astringent and grain-like. The clear astringency and bitterness, It has a crisp, dry taste with a strong sake flavor. It has a crisp, dry taste. When warmed to lukewarm The aroma is mild, with a hint of freshly pounded rice cake, A slight sweetness is accentuated, The acidity is soft and the taste is light and dry, It goes in smoothly without any cloying taste. Drinking Iron Journey Part 3. From Tokitetsu to Hokuriku Shinkansen As the soft label suggests, this sake has a good balance of umami and acidity. You can also taste a little bitterness. When you eat an ekiben together, all those tastes seem to add up to the ekiben, and both the ekiben and sake taste superb. After all, local sake and local cuisine are a perfect combination.

Second bottle of sake post today! Many people say it is dry, but for me it feels a bit sweet. The aroma and flavor are very strong! It's a bit fluffy in the mouth! It is not easy to drink. I didn't know the difference between junmai (pure rice) and brewer's alcohol, but maybe this is it? I'm proud to say that I have a stupid taste buds, but I think I understand a little...? I think I'm going to get drunk. Would it be easier to drink it hot? I thought so.
