The sake is a special sake named 46 in honor of Shiro, a cousin of the brewer who is the president and toji (master brewer) of the brewery, and it is not widely available.
It has a slightly yellowish flavor and mild aroma, with plenty of acidity and sweetness, like an adult lemon squash attack, but it soon develops a full flavor and richness that is typical of Yamahai, with a long finish. It is more like a special junmai than a junmai ginjo.
However, the alcohol content is 17 degrees, which is dangerous. On a different topic, we stopped by the Ice Breaker Tamagawa Sake Brewery on the way to the restaurant, but the alcohol content of the other sake was also over 17 degrees, but we did not feel the richness of the alcohol, which was dangerous. Are there many Tango sake with high alcohol content?
Coming back to the topic, 46 matched it with Kakinoha Sushi🍣, which didn't seem like it would go well with it, but it went well with Kakinoha Sushi, which still had fresh ingredients and plump rice, probably because it was purchased at Kintetsu Kyoto Station!
