Drinking continues at Don Chaya 🕺. We emptied the weird "Haneya", followed by another round 🍶. We chose our first brand that we could see in the cellar✨ First "Kame no Ou Junmai Ginjo Shiboritate" 🎉. Not much in the way of aroma, but a clean sweetness on the palate, with a pleasantly sharp and sweet [Kame-no-o] lingering finish! I found out later that they revived Kame-no-o and used this episode as a model for Natsuko's Sake, so in a sense, they are the pioneer of Kame-no-o 😁.

King of the turtles Niigata Hisumi Sake Brewery Purchased at Katagaya, Nishi Koyama Opened August 3, 2020. Pouring it into the glass, it has a very clean feel to it. The aroma has a strong alcohol aroma. In the mouth, it's smooth like water at first. There is no unnecessary sweetness, with a moderate acidity and bitterness in the second half. Elegant and clean.
