It is made by using Junmai-shu as part of the brewing water. This sake has a good balance of sweetness and sourness, and can be drunk like a dessert. You can enjoy it on the rocks or with soda.
It is a rare raw sake for a noble sake.
The aroma is of course sweet, but you can also feel the sourness of the koji.
The taste is sweeter than the image of the aroma, but the acidity is good, and the aftertaste is quite refreshing and easy to drink.
Personally, I think it is better to drink it with a regular meal than as a dessert.
