Which part of this sake is an ensemble (ensemble)? Sakiyami's blended the blame of all three types of yeast: pink from No. 18 yeast, gray from No. 9 yeast, and splotchy color from No. 14 yeast. I have no idea what it tastes like.
So let's actually drink it.
The aroma is faint and refreshingly acidic and tasty.
When you put it in your mouth, you will find a fruity sourness with a hint of sweetness. Then the umami comes in. You may think it is a gentle and gorgeous sake, but at the end, you will be surprised by the umami bitterness. It is a sake with interesting changes over time.
None of the flavors are outstanding, but they are all strangely unique. As the name "ensemble" suggests, it is not a unison of instruments playing the same notes, but a variety of instruments making music with various sounds. Delicious!
To use a Ghibli analogy, Ayaka from "Marnie of the Memories". She is the girl with the red round glasses who moved into the mansion where Marnie was. She has a slightly unique atmosphere. She is not beautiful, but she is cute.

The first sip has the sweetness of a junmai ginjo, followed immediately by a firm lychee-like ginjo aroma, and then a firm acidity, creating a three-tiered flavor profile.
I think this sake goes well with sashimi, especially fish with a strong flavor such as amberjack, bluefin squid, and salmon. Sake with delicate tasting fish such as sea bream, flatfish, or hamo may be overpowered by the sake.

Three days after opening the bottle. Sweet, bitter, tangy and slightly carbonated. Well-balanced, it went well with dark barbecued meat.
You could drink it alone!
Doesn't go terribly well with pickled cucumbers (🥒-᎑-🥒)
