I bought three bottles at a brewery in Aichi and brought them back to Tokyo to open them. Two of them have already been recorded in the sake book.

Ah, it's good. It's fruity and juicy. The polish and aroma are well blended, and the taste is deep.
I was told by the brewer that the yeast used was 18 yeast. It's one of my least favorite yeasts, but I guess it depends on the amount used.
On their website, they say they have a patent for "high-temperature, high-heat brewing. I've heard that Miyoshikiku brews at a high temperature to produce acidity.
I drank it over several days, and as a sake with a juicy taste, it's good with food.
There have been very few posts about Shikaiou on Sake no Wa, but I think it's a great hidden sake that should definitely become famous.

We went from Tokyo to Fukui Shuzo brewery in Aichi to buy it.
You can't find Shikaiou in Tokyo. This bottle is made from rice called Koshihikari.
I opened the bottle at home and took my first sip.

I went to Fukui Shuzo in Aichi Prefecture from Tokyo to buy some sake.
To be honest, I went there without much expectation. In Tokyo, most people don't know about "Shikaiou".
The exterior of the brewery was covered like a Berlin wall, and I didn't know where to start.

It looks more like a warehouse than a warehouse. The site is huge. We were greeted and given a detailed explanation of the sake. The first bottle was this Yumesansui Junmai Ginjo.
