I love Sasanishiki as a rice because of its aroma, but this is the first time I have seen it used as sake brewing rice. The aroma is gorgeous!

2. 65%, pure rice mash. Light acidity and spicy taste. Not much umami. I wonder if the quality is properly controlled. Maruoka near Aeon, about 1200 yen.

Very spicy! Both the aroma and the taste have a strong alcohol feeling. It seems to go well with seafood with a strong flavor.
