I looked at the library and found something I forgot to include. This is the last sake I drank on my trip to Yamagata. It was the first time for me to drink it, and it has a simple and strong flavor that is typical of Kame-no-o. It is an honest sake and delicious. On the way home, I stopped by the brewery and bought a bottle of the same sake.
It is a gift.

I am very curious about this sake because I don't know it at all.
It is a sake rice called Sake no Hana. And it is hard rice, but I have no idea what it is.
Anyway, I will drink it. Since it is fire-aged, it doesn't have a gorgeous aroma or freshness.
The bitterness comes at first, which I think is harsh, but later I feel a slight sweetness. The first sip is not as sharp as the first sip, but it is very refreshing. It is not sharp, but it does not feel sweet, even though it has a sake degree of +1.
It is not soft, but not too hard either. This would be good with vegetables and fermented seasonings such as soy sauce or miso. Natto (fermented soybeans) might also be good. This sake is to be drunk as a food wine.
I don't think it will interfere with meals.

Wadarai was the sake that got me hooked on sake a year ago. The manager told me that this was the last bottle of raw sake and that it was sure to be delicious and cosy again this year, so I bought it immediately. Last year, the sweetness stood out even though it was so inexpensive, and the aftertaste was dry. I remembered it as an exquisite sake with a dry aftertaste but still sweet. This year is no different, with a dry taste mixed with sweetness and a perfect balance. It is cheap, but delicious. I really wanted to buy a bottle!

Traveling from Niigata to Yamagata, you can experience the fruity taste of a Jyushiyo-style sake with a dry taste 😋. It also has a sweet taste when paired with sashimi of red shrimp 🦐.
