This sake was produced as a project of the Shirakawa Good Sake Association and is sold only in the Shirakawa and Nishigo areas.
It is brewed with locally grown rice by a local toji (belonging to the Yamatogawa Sake Brewery in Kitakata).
We had it well chilled and found it to be crisp and dry, easy to pair with any dish, and not overpowered by strong-flavored dishes.

When poured into a glass, it has a fruity aroma like a pear.
A hint of bitterness lingers on the palate, and a different flavor can be expected if the bottle is allowed to sit for a few days after opening.
It is easy to drink and is perfect as a midday drink.

Yamatogawa which I bought in Fukushima trip. Kitakata's famous sake. Faint amber color. A mellow aroma spreads in the mouth. Rich sweet taste of rice. I want to enjoy it at room temperature.
This sake was newly released this year.
It is said to be Junmai, but it is not labeled as Junmai-shu.
It is said to be a fusion of two different methods, Kasumochi Genshu and Yaemon Junmai Dry.
It is true that it has a sweetness and umami similar to Kasumochi Genshu, and the clean aftertaste reminds me of Junmai Dry. It's the best of both worlds 😆.
