Cold sake. After swallowing, the acidity of Yamahai fills the mouth. Hot sake. The mild Yamahai flavor goes down the throat and through the nose nicely.
This is a really complex and interesting sake. Extraordinarily rich with prominent notes of sesame and apple. Enjoyed this with salmon sashimi, but I think you are best pairing this with some very light otsumami or just drinking it on its own.
It's so carbonated that it would burst if it was in a bottle, so a special, stronger version? They put them in plastic bottles!
I've always had the impression that plastic bottles were kind of small, but there's a reason for that!
