The brewery uses brewing water from the Shinano River system and its own original yeast.
Koshiji Fukiyuki Junmai 70
An orthodox junmai with firm acidity. The acidity and tangy aftertaste may not be to your liking.

Light, with sharp acidity and spiciness. It has a tangy aftertaste.

After the Nohtaka booth, I knew I had to eat something, so I went to the basement and bought some yakitori (grilled chicken) 🐣.
There was a corner of rice balls made from Niigata's new rice in the Sake-no-jin, and I was quite tempted to try them, but I was determined not to eat carbohydrates... so I held back.
It was my first time to visit the Takano Sake Brewery.
I think I've seen the sake itself somewhere, but I've never had it 🤔.
I wonder if they took the name from Fubuki Koshiji or if the sake came first?
