This is Junmai Ginjyo Genshu 🍶.
Purchased at Kawana Sake Brewery on the national highway in Izu Kogen, Ito City during a trip to Izu.
It has a ginjo aroma, and the heady aroma is weakly banana and sake-like.
The taste is umami and dry, a pure sake. The balance of the scent, taste, and hints of aroma is made possible by the sake's beautiful quality, which is not easy to find. 😋😋😋😋
No gassiness.
Enjoy it cold to enjoy the slight acidity and the sharpness of the taste. It can also be served cold or lukewarm to enjoy its umami and alcohol content.
It seems drier than the sake with a Sake meter value of +2, probably due to the alcohol content of 17-18.
I had my family waiting in the car, so I bought it without asking about the details of the wasteful wholesale and special enclosure. It seems to be a small sake brewery and there is no information on the Internet.
But there are sake breweries that brew delicious sake that I don't know about. There must be many more in Japan. It made me think 😁.
