Happy New Year 2022! Is there anything better to celebrate New year with than sweet noble sake? This is my first time drinking kijoshu. Type: junmai, rice: Yamada Nishiki, polishing rate: 50%, SMV: -20, acidity: 2.0, yeast: in house yeast, alc.: 17% Aroma is fruit marmelade, honey, vanilla. Flavor is sweet and sour like ripe mango juice with strong sweetnes of rice. Long finish. Very rich and full-bodied. Beautiful and noble drink. It is hard to stop sipping it. I will remember this sake.

* Shoshiki Sake Brewery Headquarters 1,980 yen It is the first noble sake. The color is slightly amber, and the sweetness reminds of marron glacé or molasses. There is no stickiness that sticks to the throat, and it goes more easily than I expected. It's certainly more of a dessert drink than a food wine. To begin with, kijoshu is a luxurious sake that uses not only water but also sake itself in the brewing process. It is a luxurious sake. By adding alcohol to the fermentation process, the sugar used to make the alcohol is reduced, resulting in a sweeter taste. I'd like to try this sake from Shiga again.  5] Buy as much as you can in the cellar! ☆ [4] If I find it, I'll buy a bottle!  3] I want to drink it again in the near future!  2] I might buy it if I see it again. This is the sake that got me hooked on sake. Monsoon Is there such a sweet sake? I miss drinking it with amazement 😆 It's been a long time since I've had a drink, no, really sweet 💕 Is this a characteristic of noble breweries? 🤔 This time we only got a fire pit, so I'd love to get a raw one again next time 😉 If you're looking for a sweet drink, you'll love it ✨
