When served in the refrigerator, it has a subtle cider-like aroma. The aroma does not change much in the mouth, and after the alcohol and weak acidity, the umami of rice comes easily. The aftertaste is stimulated by alcohol, but it is not an unpleasant attack, but rather a strange numbing sensation and heat.
There is no significant change even when the temperature is set to room temperature. Should we wait a few days?
Two days later, the alcoholic stimulation has disappeared, and the umami of the rice has become noticeably mellower. The aroma is still cider-like, so the overall impression is that it is a cross between sake and mead. This is good.

Purchased at a roadside station in Shizuoka. I don't know this brand. The label gives off an old-fashioned impression.

From the first sip, there is a sweetness like caramel and custard, and a depth like maturity.
The aftertaste is nicely balanced with a hint of acidity and spiciness.
There are no trendy elements, but I like this one a lot.

The label is classic, but I don't think it's an orthodox sake. But it's not quirky, it's original.

I came across Jin Ming at a restaurant I happened to walk into. Jin Ming is loved by the locals! I still love it. But this store was closed this year. I hope to meet Tsurukame label someday.
This is a recommendation from a sake shop in Gotemba with whom I have had a long relationship. I remember drinking a Yamahai sake from Kinmei a long time ago, but it has been a while.
Negami Sake Brewery must have been a small brewery. The subtle tilt of the label on the back of the bottle looks like it was done by hand, which makes me happy!
The standing aroma is faint, a bit of cemedine and menthol, and a rather classic ginjo aroma. When I drank it, expecting a classic flavor, I found it to be a gorgeous ginjo, but with a unique fruitiness that was different from the usual. Strawberry? It feels like spring. And it is rich in flavor, including sweet, spicy, and astringent. It is smooth on the palate, but has a strong drinkability at the end. This is delicious.
I got this sake on a business trip to Shizuoka, Kanamyo Limited Junmai Ginjo, and had it warmed up.
It was my first time to try Kinmyo. I paired it with a spicy Chinese dish, and the sweetness of the sake went well with the spice of the dish😋.
The restaurant we visited that day was a place to enjoy a combination of heated sake and Chinese food, and I really enjoyed it😊.

Sake from Gotemba. Drink for the first time.
It has a strong aroma of alcohol.
When you put it in your mouth, you can taste the flavors that you don't like.
And the aroma of wood. It tastes like cedar or barrel wine.
The taste of the rice is not that thick. There is a sweetness that is a little sticky.
The aftertaste is moderate.
It is a so-called classic sake.

What is this flavor? It's the aroma you get from the cheapest sake you can get at an izakaya.
I wonder if it has something to do with storage conditions?
