寿梨庵
This is a recommendation from a sake shop in Gotemba with whom I have had a long relationship. I remember drinking a Yamahai sake from Kinmei a long time ago, but it has been a while.
Negami Sake Brewery must have been a small brewery. The subtle tilt of the label on the back of the bottle looks like it was done by hand, which makes me happy!
The standing aroma is faint, a bit of cemedine and menthol, and a rather classic ginjo aroma. When I drank it, expecting a classic flavor, I found it to be a gorgeous ginjo, but with a unique fruitiness that was different from the usual. Strawberry? It feels like spring. And it is rich in flavor, including sweet, spicy, and astringent. It is smooth on the palate, but has a strong drinkability at the end. This is delicious.
