Hello! (^o^) The spring-like weather is here. How are you all doing? In April, there was an earthquake of intensity 5 near our house. It shook quite a bit, but nothing in particular was damaged, which is good. The next day, there was a big earthquake in Taiwan. It seems that a tsunami also occurred, and I feel somewhat unsettled. The 8 million gods may be in a very bad mood. Last month, I went to a dinner party collaborated by Tsushima Tsuru-san at Metropolitan Morioka New Wing and Washinoo-san in Hachimantai. I was excited to attend the event because Washio-san had prepared some sake that is not available in the market (smiles)! First, the well-known Hokumo Sanyu. It won the gold medal in the classic yeast category at the Kura Master in France in 2023. Slightly sweet. Slightly umami. Overall, it is light. The description says it has a deep taste, but this is just my personal impression (laugh). It was delicious! (^o^)

I can't write a proper review today because it's the second time I've had a drink and I'm really drunk! But Hokumado Sanyu is always refreshing and easy to drink! The one on the left is Dewa-no-sato from Kamikigen, which is also very refreshing! It's nice to walk home drunk and stoned, isn't it?

Good evening! (^○^) I participated in a collaboration event between Japanese cuisine "Tsushima Tsuru" at Metropolitan Morioka New Wing and a long-established sake brewery, Washio (Hachimantai City), which was founded in 1829. Next, we reached out to Hokuso Sanyu (北窓三友). Hokumo Sanyu is based on a poem by Bai Juyi, which refers to sake, zither, and poetry, and was named "Hokumo Sanyu" from the idea of thinking of the drinker and cherishing a moment of relaxation. It is said that the name "Hokumo Sanyu" is based on a poem by Bai Jui Yi. (^_^;) First, let's start with the cold sake. There is almost no aroma. When you put it in your mouth, it has a strong wooden barrel flavor. The taste is more robust than Kurowashi. When it rolls on the tongue, it is gradually sweet. Pair this with Gyoja garlic mussels with vinegared miso. Yummma! Muy muy muy! Vinegared miso, delicious~! I'm so swollen. ~~~~~~ When I drank the hot sake, it was surprisingly refreshing. It feels a little dry. It's the magic of heating up the sake. At this point, Tomo Kudo, president of the 8th generation brewer, and the toji (master brewer) came to greet us. To our surprise, he is a graduate of the University of Tokyo's Faculty of Engineering. Speaking of Tokyo University, President Sato of Shinsei is also a graduate of Tokyo University. Although our faculties are different, I simply thought, "Wow! It was delicious! (^○^)

It's like a treasure hunt to find the right sake to drink at the inn before boarding the bus from Morioka station to the inn. 2017 we went with Junmai Ginjo sake. What kind of sake is served in the restaurant at the inn? I was very excited to see if there were any duplicates. That's why we have several types of sake with the date of drinking as 1/28/2017.

We compared Kitamado Sanyu (wooden bucket brewing) and Mikotsuru (Junmai Ginjo, Miyamanishiki). Almost no one knows about Washi-no-o except people in Iwate. We started to brew it in a wooden bucket last year. It was so good last year that we bought it again this year. It is not fruity, but It is not fruity, but the alcohol is not unpleasant. The taste is not unpleasant in the mouth. You can't help but drink it one after another. It is a gentle sake that does not make you tired of drinking because it is not flashy.
