Sake bought at a souvenir shop at Shinjo station when traveling in Yamagata Prefecture about a year ago. Drink before you forget It was fairly priced, but I can't help it if it's a 35% polished rice daiginjo. Mild aroma A sense of maturity like brown sugar Silky smoothness, just like the brand name Beautiful even if left at room temperature for a year Drink it while remembering the conversation with the lady at the souvenir shop and suppressing the desire to go on a trip again.

A little over a year since I last saw Hanabayo Kinu❗ Just like the name, it has a silky (I've never had it before), thick mouthfeel with a fruity, gentle sweetness and ginjo aroma 😄. We had it luxuriously with Jyushiyo ✴️ Tochigi sake is good, but Yamagata sake is also delicious ‼️ or even Niigata sake ‼️ I can't help but enjoy good sake no matter where it comes from 😃.

The only sake brewery in the Mogami region and the oldest in Yamagata Prefecture. Sake that is rarely served outside of the prefecture. Cold sake is recommended. It has a fresh fruity aroma with a fairly modern apple flavor. When you drink it, there is a slight citrus sweetness at first, followed by a rather strong bitterness, which turns into spiciness and finishes with a sharp taste. The fruity aroma is sharp, but not sweet, which is one of the typical characteristics of Yamagata. It is light and has a strong bitterness on its own, but when paired with food, it is just right and will accept a variety of snacks. Cheese and edamame are good. In terms of other specifications, Silk is a bit expensive, which takes away from the normal purchase price, but the rice Koshihikari Tsuyahime may have more flavor.

Tohoku (Miyagi → Yamagata → Aizu) → Karuizawa "2023.8-3 Recommended 2🍶 by Kunii Sake Shop in Yamagata City. They are only available in Yamagata Prefecture. It is a dry, refreshing but robust sake that complements the food. Delicious 😋.

I bought it on the recommendation of a liquor store that it is the oldest sake brewery in Yamagata Prefecture and is only distributed within Yamagata Prefecture. It is a light dry sake with a refreshing taste, fruity and alcoholic, and has a good sharpness. It is quite good as a food sake. Sake rice → Miyamanishiki Rice polishing ratio→45 Alcohol content→15.0 to 16.0

Mild acidity with a slight spiciness descending on the tongue ............... The sake I've had recently from Koya Sake Brewery seems to be the same in content, but of course it all tastes different. The cups are decorated with fish and medicinal herbs by Yuriko Asano. This is the 494th one-cup, one-pack festival.

On a trip to Yamagata I found a corner space in a souvenir shop in Hijiori Onsen (hot spring) and ordered a set of drinks to compare without hesitation. I chose a brand I didn't know from among about 7 kinds. Left Hanabayo Miyamanishiki Daiginjo Hana no Eda There is only one sake brewery in Okura Village where Hijiori Onsen is located. There used to be four, but they all quit, said the 91-year-old sales clerk at the souvenir shop at Shinjo Station. Clean, sharp, refreshingly dry. The goodness of Miyamanishiki is coming out. Cosy daiginjo, the shopkeeper said. Great sake as a food sake The middle Matsumine-no-Fuji Jungin Jusui Jikkomi A rich, sweet, juicy sake made with less water than usual. Also delicious! Right Tenyumi Midare This sake seems to be made by the "Marolatech method", which is a method used in wine brewing. It seems so now that you mention it (what?). Anyway, it is also delicious. Yesterday, I drank a red-labeled "Sakura-ame" at an izakaya (Japanese-style bar), It was the same sweet and juicy, but this "Suiame" was sweeter. I think I prefer the red one. I wanted to try more, but I had to leave the izakaya after this. What a wonderful place, Hijiori Onsen, to be able to have a drink at a souvenir shop! I want to come back again!
