Kushira is a famous sake from Nara.
Kushira Junmai.
It is quite refreshing and dry sharp on the palate.
It has little sweetness, a little acidity, a little umami, and a slight bitterness in the aftertaste.
It has a nice light dry taste, but it is easy to drink without being classical.

I was invited by Nemuchi-san to a tasting event at Amto, a liquor store near Taishibashi Imaichi Station, and participated in the same event as last week 😁.
It was my first time to attend a tasting event, so I didn't know what to expect, but each person poured freely.
It's been a long time since I've had Kushira!
Rice is Yamadanishiki produced in Kushira
Polishing ratio 80%, Sake degree +8, Acidity 2.0
Alcohol 14%.
It is refreshing, neither sweet nor spicy, and dry.

I have always wanted to try this sake, but it sells out quickly, and even the stores that do business with Chiyo Shuzo do not carry it, so I could not get it... This time, I have achieved my long-cherished wish after several years of trying!
The frustrating thing was that the car in front of us suddenly braked on the way back to the store! The bottle was shaken so much that when I opened it two days later, there was no fizziness. I will take my revenge next year (tears).
The standing aroma is weak, with just a hint of botanicals such as rice and grass. The aroma is not related to the ginjo aroma when you drink it. There is no fruity aroma, and it has a rugged taste that is typical of 80% polished rice. It is as if the sake is called "Happo Bijin" (Happo beauty) when it is less than 60% polished rice, so to some extent, it is not so glamorous.
From the moment of drinking to the end of drinking, the umami is overwhelmingly stronger than the sweetness, and it is definitely classified as dry due to the pungency, the tangy stimulation from the alcohol, and the bitterness at the end, but for some strange reason, it is not harsh at all!
While it is classical, it has a mellow, nigori-like flavor, which makes it a good match for ma-po tofu, spare ribs, and cotto ramen noodles.

A gift from a friend who loves to drink.
Contrary to the harsh atmosphere of the label, it is fruity and easy to drink! But there is a slow astringency in the back, and it is the kind of sake that gradually regains its first impression.
It was a bit strong with salted pork stew, but went well with smoked salmon.
A friend of mine gave me this sake from Nara. It has a fruity taste like apples, but it is not sweet and has a nice crispness to it! I love the slight bubbly taste. I love it!
