I am completely hooked on Chiyo-men (Chiyo-member = sake brewers of the Chiyo Sake Brewery, apparently). After experiencing several bottles of Shinomine, my first whale is also delicious. The specs are supposed to be much more refreshing, but the sweetness is just right for me these days.

Attended a sake tasting at Chiyo Sake Brewery in Gosho City, Nara Prefecture.
This is the sake that was handed out to the participants.
The aroma was sour with a light, refreshing fragrance.
It was light and balanced, with a mild acidity in the aftertaste.
I drank about 20 kinds of sake at the tasting, and my impression was that many of them were light and dry, sharp and not boring to drink.
The aroma is discreet. Fresh and fruity. The freshness, acidity, and astringency make it a refreshingly good wine!
