This is a junmai ginjo Nakadori Nama-shu made only with Yamadanishiki grown in the Kushira area where the brewery is located. The taste is a product of the water, rice, and climate of Kushira.
We are brewing Kushira's climate - we are making the most of the water and rice in pursuit of the best sake that can be expressed in this region.

I learned by googling 🤔 that Kushira is read as [Kujira] 🤔 and I learned that it is also the brewery of Shinomine which we would like to drink 🤗I would like to drink it 😋.

Kushira is associated with the sea, but it is located quite uphill and overlooks the Nara Basin. There is also a duck shrine here, where people would have lived since ancient times. Combined with the history, the sake is very flavorful.
Seasonal firefly and
Chilli, slightly effervescent, and dry without being unpleasant, it tastes great with any dish.
It is a delicious sake that goes well with firefly squid, which is plump and rich with liver.
The firefly squid catch seems to be quite abundant, so it is nice to know that it is less expensive than in previous years.
