This time it is Tetsuya Sakai of the Chiyo Sake Brewery.
This is my favorite Shinomine. I was watching the video all over the place (lol).
I can meet him in person!
I went to Asano Sake Shop in Umeda~!
The store was bustling from noon.
I found Mr. Sakai at the counter! He was talking with a customer.
He went to the cash register with two bottles of Kushira and Shinomine. I asked him to speak to me at that moment.
Mr. Sakai, can you sign my book?
He gladly wrote it for me!
I am so happy! I'm going to brag about it at work!

And the next day, Sunday. We started with the Kushira.
It has a fruity aroma. When I put it in my mouth, I could feel a slight shwashiness. The first sip was sweet, but the next sip was refreshingly dry.
I think I will drink it until it runs out....
It was a very delicious sake!

I'm a Hiroshima Carp fan who loves my hometown, Nara, Hyogo. It's complicated, isn't it?
I started my sake swamp with "Kaze no Mori, Umenoyado, and Mimuro Sugi". From there, I've always been a Nara fan, and Nara is the only place I can win!
Kushira, Gosho City, Nara Prefecture, 80% polished rice nigori sake. I was afraid to open it because the label said to be careful of explosion, but nothing happened and I stirred it by myself.
Although it is a low-polished sake, it has a clean taste with no cloying flavors. The sweetness is moderate with a bitter dry aftertaste. It tastes like a rice cider, and you can't stop drinking it.
The aroma is grain-like and classic.
From the moment it enters the mouth, it has classic acidity, umami, and bitterness.
However, the aftertaste is quite light and not at all harsh.
The body is light, but the flavor has depth.
Modern or classic? Classic?
Exquisite balance.
Mild aroma.
The water has a very soft and soft texture.
Then, the taste of rice comes in with a bitter taste.
The aroma is like freshly cooked rice.
The nose is slightly fruity and astringent, like white grapes.
The citrus-like acidity quickly passes through, leaving a slightly dry taste.
Rounded, dry, umami and spicy.

The aroma is modest, but the strength of the sake is strong.
It's not a sharp and powerful sake, but it has the maturity that only autumn sake can have.
It is classic but not that powerful.

I was at a liquor store 20-30 minutes away by bike and bought two different ones when I was going to buy another one 😵I noticed it at the register! I must be getting blurry 🤣.
I did get curious when I saw it at the liquor store..,
I bought a bottle of Kushira... which I've never had before.
Shinomine or some other sake from the Chiyo sake brewery.
The company's president, who used to make wine, started making sake with the same sense of grape growing (or not?). They use only Yamada-nishiki, which they grew themselves.
Slightly shwashy taste.
Slightly sweet and tasty? It also has a sourness.
Not a fruity sourness.
Not in a weird way, but a slightly unique taste? How can I describe it?
By the second day, the peculiarity faded, and it became more of a sweet/amami type with a bit of sourness?
It's supposed to be "not too tasty," but it was tasty enough 😋.

First, I had "Kushira".
It was refreshing and delicious!
