It has a light sweetness. Yet the umami is light. It is made from sake rice grown in Gunma Prefecture, and Hakubyo and shochu koji are used as the seed malt. The yeast is Kyokai No. 701. It tastes like old-fashioned sake brewing. It has a slight tangy taste, but it is somewhat characteristic. It has some miscellaneous taste, but we can enjoy it as a characteristic of sake brewing. It would be interesting to have one of them when you compare the sake.

Daimine Shuzo's new sake, 2024.1. It is sweet. And it is full of the flavor of Dewazan. Yet, it has a clear aftertaste. It is not sweet. I would not recommend this sake to those who like crisp Yamada-Nishiki sake, but to those who like umami-guchi type sake, this is a must-try.

This is a raw sake aged in the snow with this year's scree. Personally, I prefer it before aging. However, it has a calm, clear and delicious flavor that is sure to have many fans. We recommend comparing it with the fresher raw sake.

My favorite unfiltered raw sake. I bought several bottles and compared them, but this is still the best. It contains bubbles because it is orikagara, and when you drink it, you feel a slight stimulation on your tongue. The mouthfeel is very cool and refreshing, along with the umami. It would be an overstatement to say that the unique Omachi flavor is enhanced by the subtle tanginess. It is a pity that my vocabulary is so limited that I do not know how to describe it. In any case, please try it first! It is neither light nor dry, but you will find a special umami flavor. Nakajima Shuzo's junmai ginjo nama sake is also coming to the end of this year. We have enjoyed good sake this winter as well. Thank you!

This is a limited-quantity sake made with our own natural yeast, NATSUKI. It has a good balance of umami, sweetness, and acidity. It does not have a slight miscellaneous taste like Omachi, but the firm umami taste pleases the tongue, and the aftertaste recedes with a refreshing and unpleasant acidity. It is a sake that can be enjoyed on its own, without the need for any accompaniments.

The sake rice is Bizen Omachi and the rice polishing ratio is 60%. A refreshing sweetness spreads on the palate, followed by a fruit aroma in the nostrils. After that, there is a light miscellaneous taste and umami characteristic of Omachi. It is not a clear and light sake, but has a gentle wild taste. It is a sake to be drunk alone, while remembering the warmth and connection with people in the past.

The gentle sweetness of Ishikamon is delightful. When you take a sip, the strong flavor spreads in your mouth. Then, the fruit aroma comes through the nose. It is the sake which chooses the side dish. Sashimi is not good. If you sprinkle lemon lightly on Yanagiba fish and taste them alternately, you can bring out the best of each other.

A mix of Omachi and Aizan. Dark umami and a slight complexity. It has a light sweetness with a refreshing brewing aroma characteristic of raw sake. It is not heavy, and after it spreads in the mouth, the fruit smell goes away from the nose. It is a sake that conveys the feelings of its creator.
