It has a light sweetness. Yet the umami is light. It is made from sake rice grown in Gunma Prefecture, and Hakubyo and shochu koji are used as the seed malt. The yeast is Kyokai No. 701. It tastes like old-fashioned sake brewing. It has a slight tangy taste, but it is somewhat characteristic. It has some miscellaneous taste, but we can enjoy it as a characteristic of sake brewing. It would be interesting to have one of them when you compare the sake.
