The aroma is subdued but gorgeous.
In the mouth, it has a subtle acidity and a juice-like flavor. It is light and easy to drink without being heavy.
It would be a great wine to drink with cheese or cured ham at dinner.
The aroma is like red wine, perhaps because of the use of wine yeast. The taste is slightly sour. I guess I should describe it as adding the aroma of wine to the taste of junmai (pure rice).
The result! I love Gobashi, so it's good without question!
Purchased on recommendation from a friend. The pure rice flavor came through well the moment I put it in my mouth. A dry sake with rich rice flavor. The umami flavor remained in my mouth after drinking, and I was able to enjoy a leisurely evening drink while soaking up the lingering flavor.
My favorite Shinsei!!! Definitely a gem among them!
Sour and dry. Reminiscent of slightly sour muscat or plum.

It was dry and refreshing as only a dry sake can be.

I had been curious about it for a while and finally bought it. Then I had it for after-dinner drinking time.
First of all, I was surprised when I poured it into a glass. It had fine bubbles like carbonation? I had never had a slightly carbonated sake before, but this was the first time I had ever had such a beautifully carbonated sake. I have had slightly carbonated sake before, but this was the first time I had ever seen such fine bubbles.
The taste was.... Yum!
The aroma of ripe fruit wafted from the glass.
The pleasant slightly carbonated taste spreading in the mouth.
And the juicy taste like a perfectly ripe melon!
Not to exaggerate, but it was as if you were really tasting the juice of a perfectly ripe melon!
After dinner, dessert is a must with "Kosu-Mori"!
As the name suggests, it is best to drink it at 10 to 13 degrees Celsius, but here I dared to chill it in the refrigerator before serving it cold.
The first sip had a unique aroma and taste like brewed sake, and I thought it would be like this. But as I drank it, it reached the right temperature, and the flavor became delicious, like muscat!
It was easy to drink with a refreshing taste.
Perhaps it was the combination with the Tsumami (horse-meat sashimi) that made me feel that way, but as a food sake, I would recommend this bottle.
Also, as the label says, it seems to be a Hokkaido limited edition.
