Junmai Daiginjo from Chiyo Shuzo. The mouthfeel has a core of the typical Junmai Daiginjyo flavor.

I've been longing to try this one for a long time...finally...a ministry. The mouthfeel is like a white wine. It is pretty and light with a hint of muscatel and other fruits.

The ginjo aroma is gorgeous. It is a complex and full of flavor. The owner told us to drink it slowly because the flavor keeps changing. Indeed, the body becomes softer and softer after being served cold. It has a mysterious presence.

In March, the mountains in the Kinan area are lit up with a pale pink color ahead of the rest of the country. This sake is only available during this season. It is the only spring-announcing sake from the Ozaki Sake Brewery in the Kinan region. The label is also decorated with metallic pink cherry blossoms. It has a full, round flavor and a light mouthfeel with hints of melon, muscatel, and green apple.

Acid and fruit. Apple, melon, berries. Brilliant and light. And rich. Mellow and round, but happy and sweet on the palate with a sense of effervescence.

It has a refreshing mouthfeel, but it doesn't stop there. The body is well structured. The aroma is not as strong as it should be, but it has a gorgeous fragrance and fullness in the mouth.

Rich body with a sense of fullness. Rich aroma. It is sweet and viscous. But the aftertaste is refreshing.
