On the day of Risshun, I drank the first sake of Senkou, which I had reserved at my favorite liquor store. After all, new sake is delicious. I am glad I bought it again this year. And if I can, I would like to reserve it again for next year. I can understand the opinions of the matured hiyaoroshi drinkers, but for me, this fresh, new-born hatsuboshi that gives life to the body and wakes it up comes at the top of my sake calendar for the year. The moment you drink it, the joyful flavor of its birth spreads in your mouth for a moment, then quickly disappears, transforming into a sense of clarity like that of spring water. This refreshing sensation makes you want to taste it over and over again. After all, new sake is delicious. I am reminded of this taste once again this year. The new spring, the season when everything starts to bud, has begun, hasn't it?

The moment I drank it, a sweetness and rich flavor that seemed to have been exuded from a fruit tree was born in my mouth. However, it is short-lived, and everything disappears, leaving only the memory of how gracefully delicious it was on your tongue. That's why I want to taste it again and again. For the first time in a long time, this was a sake that I felt compelled to record! It was the first time in a long time that I felt compelled to record it. I was convinced when I found out that it was made with the best sake rice from Iwate Prefecture, Yui-no-Ko, which was released after repeated trial and error. After further research, I found out that Akatake also produces a daiginjo called Tamonodai Gyo, which is made from 35% polished Yuki no Ka. Even at 50% this time, it tasted this good, but what kind of shock would it give us if it was polished to 35%? Hmm, I'm curious.

You want to roll it around on your tongue and savor this sweetness before you taste it down your throat. Despite the rugged label, you can taste a gentle, universal fruitiness, like apples. But it's only for a short while, and you can't help but drink more and more because it has the grace to disappear quickly. In the hot and humid season from now on, if you drink it chilled, it will relax your body and mind. I want to keep it always!

Akabu's Yamada Nishiki! A collaboration of Yamada Nishiki, a famous excellent sake rice, and Akabu, there is no reason not to enjoy it. Even though the rice is polished to 50%, it retains a rich sake aroma with a refreshing aftertaste. It retains all of Akabe-san's strengths and is well-balanced.

The first sip I took right after opening the bottle without any prior information was a shock. A nice sparkling wine that can even be described as crackling. After the pleasant stimulation comes the sweetness of fruity fruit. As the color of the bottle suggests, the clarity is also exceptionally high. Some dry drinkers may think it's not dry enough, but I think this is my favorite of the Akabuki line.
