On the day of Risshun, I drank the first sake of Senkou, which I had reserved at my favorite liquor store. After all, new sake is delicious. I am glad I bought it again this year. And if I can, I would like to reserve it again for next year.
I can understand the opinions of the matured hiyaoroshi drinkers, but for me, this fresh, new-born hatsuboshi that gives life to the body and wakes it up comes at the top of my sake calendar for the year.
The moment you drink it, the joyful flavor of its birth spreads in your mouth for a moment, then quickly disappears, transforming into a sense of clarity like that of spring water. This refreshing sensation makes you want to taste it over and over again. After all, new sake is delicious.
I am reminded of this taste once again this year.
The new spring, the season when everything starts to bud, has begun, hasn't it?
