Sake is clear, pale, lemon green. Aromatic intensity is medium, giving impressions of mint, pepper, yoghurt, orange, bran, and blossom. On the palate, medium dry, with medium acidity and umami. Alcohol level is middling too, giving an overall medium-light impression of the body. Likewise, this is a less intense sake that can be enjoyed well with many different foods. The finish is short and clean. This sake is restrained and elegant, with floral and lactic elements taking center stage. Excellent

Usunigori, this sake has light lees and small bubbles indicating some undissolved CO2. Pale lemon green in color. Aroma is less pronounced, but with sweet tones of steamed rice, cream, banana, cherry, and strawberry. On the palate, it’s semi-sweet, with subdued acidity and umami, and a medium alcohol level, overall giving the impression of a medium body. Characteristics of cherry, fresh banana, cream cheese, and lemongrass makes this an outstanding, slightly bubbly spring sake.

Color is clear, pale, subtle lemon green. Aroma is medium(-), giving impressions of steamed rice, yogurt, fresh cream cheese, white grape, mint. On the palate, this sake is medium dry, with medium levels of acidity and umami. It’s crisp, medium body and standard alcohol makes this a low-medium intense flavored sake. It is has a キレ which is sure to pair well with seafood like squid or scallops. I would love to try this with バター醤油ホタテ. Hassan does it again with this outstanding junmai.

It’s medium sweet, with medium (-) acidity, medium (-) umami, medium alcohol, with an overall lighter body profile. The finish is medium as well, with bright lemony and grassy notes. Fresh, young, decent shiboritate junmai ginjo from 松の司.

与右衛門山廃仕込み、蔵付き酵母 Clear, pale, lemon color. Light aromas of yogurt, steamed rice, orange, lemongrass. Medium dry, with medium umami and medium+ acidity. Medium bodied sake, with pronounced lactic characteristics very reminiscent of yogurt. Incredible Yamahai, made even more unique by the house yeast used in the production of this sake. An outstanding yamahai with a medium finish, and all the lactic goodness one would expect from a non-sokujō shubo.

Color is cloudy, hazy light green from the sediments left over from fune pressing. The nose has a spark of citrus overlying a hearty base of cereal notes. A first taste gives a lively impression of fresh lemony citrus, which quickly gives way to a wide breadth of umami that spreads to the back of the tongue. Not overly sweet, this origarami is carried by a pronounced acidity into a rich and slightly lingering finish. A very good nama tokubetsu junmai from Kikuzakari-shuzo.
